Meals/snacks 6mo + post op

Hi all! I am looking for some ideas from people about 6 months to a year out and what they enjoy for meals and snacks. I do reference the recipe board (so many good ideas there) but I’m looking for just general ideas - I am a bit sick of the things I usually eat and as a result I’m making choices that lack nutritional value.

For reference, I had gastric bypass in March of this year. I don’t do caffeine or artificial sugar, and I am really tired of protein shakes, eggs and deli meat roll ups. Thanks in advance everyone!
 
I have a lot of food and snacks based on beans and work in other plants that have higher protein. Roasted chickpeas with some seasoning can make nice, crunchy snacks. I'll use various nuts and seeds in various applications. Basically, I try to combine several high protein plant sources into my meals and snacks. I'll have some Greek yogurt, which is pretty high in protein as well.

If you like salmon and tuna, those are good options for various meals.

There are alternatives to pasta like black bean pasta which is really high in protein.

If you make sauces, soups or stews you can add in some unflavored protein powder if desired.

My personal standby snack is carrots and hummus. I have that quite a bit if I feel hungry but it's not time to have a regular meal.
 
I agree with Ryan. I eat a lot of beans. Mostly in Mexican style dishes, as I just love the flavors. I throw a chicken breast in the slow cooker with some salsa, taco seasoning and black beans. Or a few pork chops and pinto beans. It will last me for lunches for a few days. I don't use tortillas. I also slow cook chicken for chicken salad.

Now that the weather is colder, it's stew/soup season. Get out your slow cooker. I basically slow cook almost everything now. I find that it breaks down meats well enough that I can digest them easier. I still have a hard time with steak, burgers etc. But even beef is easier for me in the slow cooker. I also like to make enough that I have left overs, to cover lunches.
 
We ate goulash for dinner tonight. I used ground turkey - it offers more protein than other meats. The left overs I put into small bowls for my lunch/dinner and in the freezer.

I also make white chicken chili - you can use chicken or turkey, great northern beans/cannellini beans/white beans -fresh is so much better than canned.

Like Missy, I use my crock pot/slow cooker/insta pot for all kinds of soups and so forth. Meatballs in the slow cooker are yummy too! The possibilities are endless.
 
I’m almost 5.5 months out so thought I would leave some ideas… for snacks I eat, almonds/cheese, guacamole w/protein chips, jerky, raw veggies w/ranch, yogurt parfait, Fiber One protein bars, Fiber One brownies, tuna w/almond crackers, pudding cup w/ whip cream, trail mix and for meals I do a taco salad using protein chips for taco shell, Hillshire Farm sausage w/onions & bell peppers sautéd, black eyed peas w/ same kind of sausage, chicken sausage w/onions wrapped in lettuce w/mustard, Mongolian beef, pizza using a low carb tortilla, shrimp cocktail, chili, hamburgers wrapped in lettuce w/beans & corn, tacos w/low carb tortilla & Mexican rice (very little), chorizo & egg tacos w/same tortilla. I have more but I think that’s a pretty good list lol. Some might not find many of these as healthy as they could be but I can only do so much chicken and fish lol… I like my pork and red meats :)

Wow, what a great list of suggestions. Thank you. Do you or anyone here have any trouble with eating corn? It was suggested to avoid corn, but I don't know if/when I can eat it again. I know it can be hard to digest, and it's got a good bit of carbs. But oh how I love mashed potatoes and corn mixed together (on the plate separated but eaten together on a spoon or fork.) I guess I could put corn in my mini chopper to break it down to make it easier to digest.
 
Awesome suggestions from everyone!!! THANK YOU! I just needed to be reminded of other options. My cousin has an extra crock pot she is lending me for winter and I’m excited to do some recipes to last me for most of the week. The good thing is my husband is vegetarian so it won’t all disappear like some of my other foods! Lol. Lesa that is a great list. Omg I love shrimp cocktail - I always have a bag in the freezer, so good!

You’re welcome! I don’t actually eat corn often but the few times I have I just make sure to chew really well and I do fine with it. Corn was also on my not to eat list but my surgeon isn’t a nutritionist so I took that with a grain of salt lol. I do know that it’s not the most nutritious veggie so I enjoy other things like peas, carrots, mixed veggies, Brussels sprouts etc. And yes, I love mixing my mashed potatoes with veggies!
