Ricotta Bake

Hi there. Are you in the pureed stage? If so, and you are that early on in the process, I personally wouldn't worry about calories. In the beginning you will be getting so few calories anyway, that I wouldn't even track them. The main thing is to follow your food eating stage as your stomach heals, and following your restriction cues on when you feel full.

Shelly’s Ricotta Bake
8 oz ricotta cheese
1/2 cup grated Parmesan
1 large egg beaten
1 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup marinara
1/2 cup shredded mozzarella

mix ricotta cheese Parmesan beaten egg seasonings together and place in an oven proof dish. Poor marinara on top and top with mozzarella cheese. Bake in the oven at 450° for about 20 to 25 minutes or nuke it till hot and bubbly.

Thank you for sharing this recipe. It sounds like lasagna w/o the noodles (carbs). They keep showing the Stouffer's Lasagna on tv, which is a carbohydrate nightmare but a sauce & cheese lover's dream. I am definitely making this, maybe this weekend. Could definitely satisfy my tastebuds. I also have some frozen chicken & beef mini meatballs I might throw in. Yum!!!
