Just wanted to share two things I've developed that were good:
Thick sliced tomatoes with ricotta, mozzarella, fresh basil, garlic, italian seasoning, salt and pepper - put it under the broiler until the cheese browns. Mini pizzas with no carbs and about 5 g protein for each one.
Also - the protein shakes are nasty. I've made up one that has 33 g protein - 1 scoop protein mix, 1 c. skim milk, 4-5 ice cubes, 1/2 banana, and 3-oz vanilla greek yogurt. The banana has about 14 g carbs, but it makes it taste infinitely better.
