To you too Butterfly. Anyone out there have any good New Year's Eve plans? Since it's mid-week, I'll probably just put on comfy clothes and relax. Hehe, showing my age admitting that!Wishing everyone a safe, healthy & HAPPY NEW YEAR!!

Looks fantastic Diane! Well worth the extra calories today. Not enabling but it looks very healthy and you deserve it. Tomorrow is a new day.As I mentioned earlier, I am spending this bloc of time eating healthy. Up until supper, I had taken in 530 calories and 38 grams of protein. Then I made this dinner, which is sitting half-eaten on the counter, but looks huge in the photo.

This is 2/3 of my plate filled with lettuce. I dressed the salad, green onions and Persian cucumber with red pepper flakes and fresh cracked black pepper. No other dressing--yet. I microwaved a sweet potato and cut into discs. I sauteed a boneless/skinless chicken thigh and as it cooked, drizzled 2T of ranch dressing over it & let it melt down. When it was nearly done, I added a pat of butter & a half-cup of concentrated chicken stock, then swirled it around to finish it. I removed the chicken and poured this chicken sauce over everything on the plate, including the salad. I guess this will be my supper tomorrow, too.
It does add up so quickly! It's just a really strong object lesson about the power of condiments to ruin everything. If I didn't have two tablespoons of salad dressing and one tablespoon of butter, I would have stayed close to 900 calories. Life is all about choices and some of them seem very very tiny but make a huge difference. Happy New Year Brenda!
You too Bill!Happy New Year everyone!
Very true!Chiming in...kudos on keeping track of your nutrition! There will be days we "slip" a bit. I'm trying to wrap my head around a slip being just that and not a slide.![]()
