I wanted to share this tasty treat idea with everyone! They are soooo good!


INGREDIENTS

*3/4 cup oatmeal
*1/4 cup oat bran
*1 tbsp whole wheat flour
*6 egg whites
*125g cottage cheese
*1/4 tsp baking soda
*1 tsp splenda
*1/4 cup crushed pecans
*2 tbsp low calorie maple syrup
*1 tsp maple extract
*1 tsp vanilla extract

DIRECTIONS

Preheat oven to 350 degrees. In a blender, mix all the ingredients 9Except the crushed pecans). Blend until the mix gets thick. Then add the crushed pecans to the mix and stir with a spoon or spatula. Pour the mix in a muffin tin and cook for 30min.

QUICK TIP

These muffin freeze well. If you make a big batch, you can freeze them and then just microwave one when you get a craving for one.
