Need Quick Menu Ideas that dont include bread or Pasta.

It's been 4 (four) since my lap-band surgery. I've had 3 adjustments need another bcause i can still eat almost everything. I need some ideas on quick meals for 1 person.

I will take all comments on anything u think of.

Cook boneless skinless chicken breast (I like to slow cook it til falling apart tender) or a lean pork loin cooked very tender, or lean beef cooked tender, then I cut my meat up into portions. I freeze most of it into many small containers. I put some of it into the refrigerator, enough to last a few days. Then at each meal I take out a portion of meat (40 calories for 1/3 of a large chicken breast), and 2 vegetables. I like green beans (18 calories for 1/4 cup) and stewed tomatoes (10 calories for 1/4 cup) I also like to eat raw tomatoes, they have very little calories. Sometimes I eat cooked carrots, or peas. Peas are eaten in moderation because it does have carbs but it also has protein. Other veggies can be substituted. Vegetables can be made up ahead and put in the freezer and refrigerator, so everything just is heated up quickly when you are ready to eat. At breakfast I usually eat a scrambled egg with cheese melted over it and I like a little salsa on the top of it. I also like to eat salad as a meal with chicken breast, green pepper and celery in it with a low calorie dressing. This is basically how I eat everyday.

Wow thanks a bunch. they send me a menu sample and i don't eat more than half the stuff. i have to write down everything i eat and now i see it doesnt matter how often eat the same thing but that i eat it w/veggies which i haven't been doing much.

There is a website called CALORIE KING and you put in a food and it will tell you the calories, protein and other nutritional values. I try to eat the vegetables that I like that are the lowest carbs and calories. At first I was trying to just mainly eat protein but I got so constipated it was horrible. I eat a couple tablespoons of each vegetable now with my meat and it works for me. I dont mind eating the same thing as long as I like it. You could cook a couple types of meat at a time and switch off between them. Oh, if you like fish, that is excellent also.

Thanks for the website. At first I was also eating protein snacks but I got so tired of them. I'm going to start having my aide cook me lots of vegetables and have the available. i love fish but its so expensive i'm on a fixed income and thats mostly the problem. It's hard to eat healthy on a fixed income. I'm going to try better selections next week. Hopefully i will have an aide this week who can help me.

I'm also on a fixed income, and it can be hard I know. I go to Sam's or we have BJ's here in VA, it's like Sam's and I buy a huge boneless pork loin or beef roast and I can eat for a very long time from it. The pork loin is so lean and it will last me weeks til It's gone and if I get really tired of it I change off to chicken usually. It all gets frozen into small plastic bowls so nothing is wasted. Walmart usually has a good price on chicken. Most supermarkets have weekly specials on different kinds of meat. Fish is so good but you are right, it is really expensive.
