a WHOLE head of cauliflower...

lasts entirely too long...like more than a week! Same with squash.

Here's my issue. I've been having issues getting veggies in because a) I like fresh, b) nature has generous serving sizes, c) I'm a singleton, d) I have a small freezer, and, e) I just might be a lazy cook.

I have a 6 week appt with my dietician this afternoon and I'm pretty sure she's going to scold me for not eating a more balanced diet--trust me, am totally getting the protein in. Hopefully now that I will officially be moved on to normal food, with fewer restrictions, I'll get more bold in my food choices.

Not sure if you all can help me...maybe I need inspiration? Or maybe I'm just being a whiny baby. :D

Cooking takes time, creates mess, and we can only eat a little of it.
 
I too have trouble getting my veggies in. I was drinking V8 for a while but then stopped. Maybe I should start again. I prefer raw veggies to most of the cooked ones. So I do try to have salads but eat them mid-afternoon instead of at a meal. If you get any advice from the dietician, please pass it along!
 
I rarely eat anything but protein. I might put some onion on/with my food but thats about it. Occasionally my dinner might have a few peices of borrocoli or green beans.

My nutritionist knows this an has never said anything negative
 
I also am not getting in many veggies. However, my nutritionist tells me that the new serving size for veggies is a 1-2 TABLESPOONS. So, yeah, hard to motivate myself to cook them when a serving is 2 bites. I have taken to adding them into pretty much everything. I've mentioned that I slow cook/meal prep a lot. I add celery, onion, and peppers to mostly everything. Cauliflower to chili, also like it mashed. I also prefer fresh, but mostly use frozen now because you can take out 2 broccoli florets and reseal the rest of the bag. But keep in mind, just like a serving of meat is no longer what it once was, that is true of veggies as well. They don't expect you to get 6 servings of 1/2C each. That's why we have to take vitamins.

Thank you Judy. I decided to get serious after I saw your comment about see you another members real face. I figured it probably isn't fair to be goofy when there are so many newcomers who wants to talk to somebody with a face! I need to make another one with my glasses off because I don't wear them anymore. I had surgery that included Lasix on my eyes. So I have brand new lenses and 20/40 vision. I haven't gone without corrective lenses since I was 11 years old! But you know, you do get attached to glasses after a while oh, and your face doesn't feel right unless you have them on!
You're quite welcome. My husband had Lasix many years ago, he was really happy with it.
 
You'll have more opportunities to work veggies in over time. I generally try to eat at least 30 different types of plants each week, but that counts spices, herbs, nuts, seeds, mushrooms, fruits and veggies. I throw them in everything in small amounts. You really don't need a large quantity to get benefits from them. Small amounts here and there will do good things for you.

Cooking is messy, takes time, and can be a total pain, but if you can find a balance, in simple recipes with few ingredients and add more spices and herbs to add in more flavor to make things interesting.

Put together some sort of chunky soup with a variety of veggies that you can freeze in small containers, or perhaps some sort of baked dish that can be divided up and frozen. The serving of a big baking dish can be spread out over a long period of time, so you don't have to have it every day. Then you can have a fairly long period of time when you are having some simple meals like a small wrap or something and alternate it with a soup or stew or a baked portion that were frozen. Every now and then you do have to do some prep or cooking, but with our small stomachs, that prep and baking can last a long time and free up quite a bit of time on other days.

I think the issue I have is I'm only two months out and my bariatric team is much more conservative than most approaches the rest of you are experiencing.

I had an appointment the the NP yesterday and she was sooo nice! No judgment, so empathic and helpful. After years of passive aggressive weight loss "counselors" [Jenny Craig was the worst!] I was armed for bear but didn't need it. She said everything I was experiencing was normal: feeling like I wasn't getting enough product, eating mostly dairy for meals, a distaste for most protein shakes, etc. When she said I could move on to salads and nuts I almost jumped through the monitor and hugged her! :D I may make a vegetable soup to get more veggies in and it freezes better than most. Also, I found some frozen "riced" cauliflower at TJs that will make it easy to get just a little bit of veggies without a huge amount of work.

So yes, I think now it will get better with 2.5 oz meals, Fairlife shakes (a pleasant surprise), and more options. In another month I'll have my 3 month meeting and we'll go over my blood work which will be interesting.
 
That's wonderful Lisa! I never did well with aggressive weight loss counselors either. I never could watch the biggest loser because of that. So glad that it all worked out for you and you had a great appointment. I am going for bariatric bloodwork next week so I am actually looking forward to that to make sure all my levels are where they should be.

I loved the biggest lover even though it was incredibly unhealthy. One of the contestants, maybe even a winner? Lives in the town right next to me and holds classes at the gym in town.
