lasts entirely too long...like more than a week! Same with squash.
Here's my issue. I've been having issues getting veggies in because a) I like fresh, b) nature has generous serving sizes, c) I'm a singleton, d) I have a small freezer, and, e) I just might be a lazy cook.
I have a 6 week appt with my dietician this afternoon and I'm pretty sure she's going to scold me for not eating a more balanced diet--trust me, am totally getting the protein in. Hopefully now that I will officially be moved on to normal food, with fewer restrictions, I'll get more bold in my food choices.
Not sure if you all can help me...maybe I need inspiration? Or maybe I'm just being a whiny baby.
Cooking takes time, creates mess, and we can only eat a little of it.
